Nothing better illustrates our cultural devotion to winemaking proportional to its defining fruit, with dining in mind, than our classic Cabernet Sauvignon. Today, Cabernet Sauvignon is widely dreaded or adored, for the same wrong reason -- a competitive inflation in tannins and hypersaturation in body, overgrown on the vine and overbuilt in the winery, to match jammy, tannic biceps on the adjacent bench. Not here. This is wine built for pairing with complex and lavish flavors and textures of meats and game, roasted or grilled, not for cigars. The growing season favors a graceful evolution in the wine, which is aged in barrels selected for proportionate evolution in oak balanced to its structure and vivid fruit. The result is a Cabernet Sauvignon restored to compatibility with a wider array of dishes, as well as accompanying the classics such as steaks and rich cheeses, with satisfying elegance.
Vintage Factors:
A long and cool growing season with a fairly dry October allowed for a later than average harvest that resulted in
beautiful concentration in aromatics and ripening of tannins. Extended aging potential has been observed in our reds. This is a vintage of exceptional value in our Cabernet Sauvignon.
Vinification:
Traditional fermentation on the skins for 5 to 7 days in stainless steel tank, and maceration of 10-14 days in stainless steel tank. Aged for 12 months in new and used barriques of superior French oak, air-dried at least 3 years before coopering.

Tasting Notes:
Complex and inviting, ripened dark berry fruit woven with currant, cassis, and chocolate notes. As expected, supple and refined tannins sustain a bold but balanced finish.
Optimum Drinking:
Beautiful now, the wine will flourish in bottle for at least through 2014.
