Daringly extravagant to produce and endowed with great aging potential, the Malvaxia Passito is our most overt tribute to our heritage, our gifts, our estate, and indeed to the time we are granted to translate them into wine, and is the most generous wine we offer. The Passito style of dessert winemaking calls for the grapes to be picked before frost and not frozen by other means. Instead, they are quietly air-dried on open racks for several months, to raisinise and concentrate flavors and sugars. Eventually, they are pressed, not crushed, a prodigal sacrifice of volume in favor of essence. Extended fermentation in older oak, and at least 24 months’ aging in barrel develop a wine of gratifying power, layered lusciousness and complexity, touched by an already advanced maturity. The wine pairs beautifully with complex cheeses, but also stands alone at dessert, rewarding extended contemplation with friends and family.
2005 gave us very elegantly balanced and ripened fruit, promising excellent age-worthiness in this Passito wine.
A proprietary blend of Moscato Ottonel and Vidal, the Malvaxia Passito is barrel fermented and then barrel aged for at least 24 months, and is bottled without filtration.

Densely golden and amber, commonly the image of older white wines, transparently luscious to the eye, creamy texture visible and lush on the palate. Intense bouquet of tropical fruits, including apricot and pineapple, pear, honeyand almond. Hints of evolving into age through skilled structuring in the winery, a firm foundation of alcohol and sugar assures long palate and shelf life.
