Phileo

Winner of the San Francisco Gold Medal for Moscato, the Monticello Cup, and placements on the finest wine lists, Philéo projects a literally irresistible freshness. It is often praised for the expectations it defies -- it isn’t cloying, it isn’t syrupy. Effusively and gorgeously aromatic of roses and apricots, with an intriguingly light lusciousness, it is one of the most elegant and versatile dessert wines produced anywhere in the New World, and one of our most beloved. Chef Patrick O’Connell of The Inn at Little Washington presented Philéo for dessert on his guest appearance at Ferran Adría’s equally esteemed E Bulli restaurant in Barcelona. Its claim upon the human smile is universal.

Vinification:
A propriety, non-vintage blend predominantly of Moscato Ottonel and Traminer Aromatico, fermented in stainless steel at the unusually cool temperature of 45 degrees F and at unusual length, 70 days. Aged on the lees in stainless steel at least four months, resting in bottle another 5 before release.

0.71% Total Acidity

Tasting Notes:
A truly beautiful and friendly dessert wine, with a brightly refreshing sweetness indebted to a carefully preserved fruit acidity, for a cleanand disarmingly elegant finish.

Optimum Drinking:
Meant to be drunk young, ideally 1 year, chilled.

Food Pairings:
Poached pear tart with crème anglaise.
Vanilla bean ice cream with marinated strawberry
Crême brulée
